Axcis London were thrilled to raise £131 for MacMillan when they ran their recent “World’s Biggest Coffee Morning”. Helena was crowned “Star Baker” with her yummy bakes. She shares her most popular recipe here so that you too can get baking over half term. This recipe is simple enough to do with children, and can even be turned into some spooky Halloween treats – so what are you waiting for? GET BAKING!

Helena’s Squidgey Chocolate Cupcakes

Equipment

  • 1 large mixing bowl
  • 1 sieve
  • 1 large saucepan
  • 1 measuring jug
  • 1 whisk
  • 1 spatula
  • Kitchen scales
  • 2 x 12 hole bun tins
  • 24 bun cases

Ingredients

For the Cake

  • 250ml cola
  • 250g butter
  • 75g cocoa powder
  • 300g sugar
  • 150ml sour cream
  • 2 eggs
  • 1tbsp vanilla extract
  • 275g plain flour
  • 2tsp bicarbonate of soda

For the Topping

  • 300g cream cheese
  • 150g icing sugar
  • 100ml double cream

Method

  1. Heat oven to 180c
  2. Line cupcake pans with cake cases
  3. Heat cola gently in a pan with butter until it melts together
  4. Whisk in cocoa powder and sugar
  5. In a separate bowl, mix together the sour cream, eggs and vanilla, then add to your pan
  6. Beat in flour and bicarb
  7. Gently fill the cake cases to about 2/3 and bake for 12 – 15 mins or until well risen and springy to the touch
  8. Cool completely on a wire rack
  9. Beat the topping ingredients together (sifting the flour in to avoid lumps) and spread/pipe on cakes
  10. EAT!

Halloween decoration ideas

If you are making these cakes for Halloween, why not colour the icing orange, purple or green and add some edible glitter, or pipe on spider webs and spiders with an icing pen?
